Spicy Cucumber Salad.

Nice quick and easy spicy cucumber salad.
Portion for 4-6.

Goes well with vodka and hot meat dish.

 

Ingredients:

  • 6-8 small cucumbers
  • 1 green chili pepper
  • 1 red chili pepper
  • 4-5 cloves of garlic
  • Soy sauce – 4 tbs
  • Sesame oil – 2 tbs
  • Rice or Apple Cider vinegar – 2 tbs
  • Salt – 1 tbs

Optional Ingredients:

  • Sugar – 1 tea spoon
  • Anice – 1/2 tea spoon
  • Vodka – 1 tea spoon
  • Ginger – minced – 1 tbs
  • Sesame seeds – 1 tbs

Process:

  • Wash the cucumbers
  • Cut in half
  • Remove the seeds
  • Put cored cucumbers in a plastic bag and close it.
  • Beat them with a wooden mincer or a hammer. Gently, the objective is to open them up a bit so don’t overdo and create a mass out of them.
  • Take cucumbers out of the bag and cut diagonally into 1/4 inch thick slices.
  • Place in a mixing bowl, salt and put the vinegar in.
  • Mix well
  • Set aside for at least 10 mins. Preferably 30.
  • Cut peppers and garlic into small pieces.
  • Drain the juice from the cucumbers once the time is up.
  • Mix in peppers, garlic, soy sauce and sesame oil.
  • If time allows – chill in the fridge for not more than 10 minutes otherwise serve as is.

Don’t keep it marinating for too long. The salad tastes best when the cucumbers are crispy.
