The process to make a great medium rare steak on a grill or hot cast iron skillet is quite simple.
- Get a steak that is at least 1 1/2 inch thick. I like them thick, fresh and juicy.
- Salt and pepper the steak either right before it goes on an extremely hot surface or about 45 mins prior or longer.
- Ensure that the cooking surface is extremely hot
- Each side gets cooked for 2 minutes. Then do another minute on each side.
- Then put it away for about 5 minutes to allow muscles fibers to relax, juices to flow back into the fibers and evenly distribute.
- Then do another 30 seconds on each side to accent the crust.
- If it is a skillet I add butter, some garlic, few rings of shallots and rosemary to make the steak more flavorful and I baste the top of the steak with this mix while the bottom gets grilled.
- If it is a grill I prepare the butter mix in advance and add it on the steak after it is cooked.
Love it or hate it but this is what works for me.
I cook skirt, hanger and filet mignon steaks a bit differently but that is a subject of a separate post.
