Marinated Red Onion. Recipe.

These onions go well with meat as is or as an add-on to a salad with tomatoes and cucumbers.

A very good vodka chaser – this simple dish goes by very fast.

Yields: 4-6 portions

Ingredients

  • 1 large red onion
  • Organic apple cider vinegar - 1 cup
  • Sugar or Stevia
  • Salt
  • Lemon juice (optional)

Method

  • Make very thin slices of onion using mandolin
  • Wash onions in cold water and drain
  • Mix sugar or stevia with vinegar and salt until the taste is balanced - not too sour, not too salty, not too sweet. It has to make sense to your taste buds.
  • If you like drop some lemon juice to the mix but I find apple cider vinegar adequate to provide complex sourness
  • Mix the onions into the solution.
  • Squish them using hands but not too much.
  • Put into a container and leave for at least 30 minutes.
  • It can stay for a week or so covered and taste delicious.
