Flourless Banana Pancakes. Recipe.

Otherwise – just get to it. These pancakes are a very nice morning starter, easy to digest, they can make her happy and in turn – you too.

Yields: 4 servings

Tools and Devices

  • A pan with non stick surface
  • Immersion or regular blender
  • Silicone form (optional if you want them thick and resemble real pancakes)
  • Spatula
  • Source of heat


Ingredients for 4 people:
  • 4 bananas
  • 8 eggs
  • Cinnamon
  • Salt
  • Coconut oil
  • Blueberries
  • Chocolate


  • Blend eggs, bananas, a pinch of cinnamon and a pinch of salt into a smooth homogenous mass.
  • Put a pan on medium heat. If you have a lot to cook – use two pans at the same time.
  • Place silicone forms
  • Add a bit of coconut butter in the ring
  • Pour the mass till it fills a bit more than ¾ of the ring.
  • Cover
  • In about 3 minutes check that the mass is no longer liquidy and somewhat settled.
  • Try to remove the form. You may need a knife or thin spatula or a toothpick to move along the inner edge to separate the mass from the walls. If pancake starts leaking  - keep it longer another minute.
  • Remove the rings and flip. Sear for a minute and take off the fire.
  • If cooking more than one round – place the ready ones on a tray and store inside stove on warm setting.
  • Serve with iSi infused fruit mousse, sour cream blended with cottage cheese and chocolate, or like usual pancakes with maple syrup.
