Omelet. Quick Variation. Recipe.

A very simple recipe that is perfect for Breakfast In Bed.

I am including a few variations for the fillers but use your own imagination. With the right attitude almost any vegetable can be used and if you don’t have much around – meat mixed with some hot sauce, thinly cut sausages, egg whites – all can be leveraged.

I normally do it in the following order:

  1. Prepare the omelet mix and set it aside to settle.
  2. Cook the fillers as some veggies may take time to cook and once they are done I keep them inside my oven on “Warm” setting.
  3. Prepare serving tray with plates, cups, hot coffee or tea.
  4. Cook omelets.
  5. Brew tea or coffee while omelets are cooking.
  6. Serve hot

Tools and Devices

  • Immersion blender
  • Non stick skillet - 6" (or 9" if she likes them big)
  • Non stick spatula
  • Another skillet or two for cooking the fillers
  • A cutting board and sharp knives

Ingredients

Omelet
  • Eggs - 8
  • Heavy cream - 30 Grams
  • Salt
  • Cooking oil of your choice
Optional Fillers:
  • Shredded Cheese - a handful
  • Sauté mushrooms and spinach - a handful of each
  • Sauté red pepper
  • Sausages cut very thinly to avoid chunky bites.
  • Sauté tomatoes with hot sauce
  • Sauté onions
  • Bacon
  • Sun or Oven Dried Tomatoes
  • Franks cut in 1" chunks and lightly cooked on a skillet.
Additional items to consider:
Try serving this along with squash muffin and a plum pie.

Method

Omelet:
  • Mix the eggs, salt and heavy cream using immersion blender. To avoid splatter use a mixing bowl with tall straight walls and flat bottom.
  • Put aside to settle. Strain before usage to ensure that bubbles do not get into the skillet.
  • Heat a skillet on medium fire and unless using a very good non-stick one put a spoon of cooking oil on it and spread all over the surface using a spatula.
  • Pour 1/4 of the mixture onto the skillet.
  • Cover with a glass cover and keep on medium heat.
  • Observe the omelete until its top firms up. Probably 5 mins or so. Watch for bubbles if they start forming the skillet is too hot. You can open the cover and pop them but try to do a better temperature control.
  • Open the cover and place your fillers in the center of the omelet. If you will be folding it - place in a straight line stretching from one edge to another through the center. If the plan is to use an open omelet - place in the middle.
  • Fold the omelet if you want to serve it folded.
  • Place on a warm plate.
  • If making more - place it in the oven on lowest Warm setting so it keeps warm but no longer cooks.
  • Repeat with another omelet.
