Plum Pie with Rum. Recipe.

A very quick and easy recipe of  my favorite plum pie. Read more about it here if you don’t value your time.

Serve it hot  as part of “breakfast in bed” routine or cold as late dinner dessert. She will blame you for feeding her extra calories but will eat it all. Use it as an opportunity to burn all that sugar via vigorous copulations. Win win for everyone.

Few important nuances:

  • Select dark, large and juicy plums.
  • Rum is a very important component. Pour at least a couple of ounces. Without rum the cake loses its appeal.
  • Do not open the stove while the pie cooks. You can watch but can’t disrupt the process.
  • You are allowed to test its readiness when its cooking time is up via penetration by a thin wooden stick.  If it comes out dry – the pie is done.

Ingredients

  • Sugar - 200 gr. (I prefer Organic Brown Sugar)
  • Butter - 120 gr. (unsalted)
  • Wheat flour - 250 gr.
  • Baking Soda - 1 tsp. spoon
  • Eggs - 2 pcs.
  • Ground cinnamon - 1 tsp. spoon
  • Dark plums - 12 pieces cut into halves, pits removed
  • Salt - a pinch
  • Vanilla extract - if you like it.
  • Rum - 2-3 oz.

Method

  • Preheat the oven to 360 F / 175 C
  • Melt the butter in a pot.
  • Beat the butter and sugar into a homogeneous mass
  • Add salt, baking soda and eggs.
  • Pour rum
  • Beat until smooth
  • Start adding flour. One spoon at a time, thoroughly mixed. Follow with the next spoonful until you get a fairly stiff dough.
  • Coat baking tray with butter.
  • Evenly spread dough along the bottom of the tray.
  • The layer will not be very thick. Do not worry, the dough will rise in the oven.
  • Put the plums on the dough. Make them fit tight. Cut side into the dough. It is important.
  • I like to pressure them into the dough a bit.
  • Sprinkle with cinnamon. Optionally, mix 1 part cinnamon and 2 parts sugar.
  • Bake for 45-50 minutes. Check the readiness by inserting a toothpick into the dough. When it comes out dry - the pie is ready.
