Yields: 4 portions

Tools and Devices

  • A pot to boil water
  • A glass or metal bowl that can fit on top of that pot
  • Another pot for ice that will fit the bowl
  • Silicone spatula
  • Whisk - I prefer to use an electric one but a true chef will likely do it by hand.
  • Metal forms to shape the ready product

Ingredients

  • 350 grams of dark chocolate. 70% cocoa or more
  • 270 ml of filtered hot water
  • ice cubes

Method

  • Prepare bain marie. In plain English it means - boil water in a larger pot
  • Cut the chocolate
  • Prepare a bowl with ice cubes and set aside
  • Turn off the heat
  • Place the chocolate into a bowl
  • Place bowl on top of hot water pot and using spatula mix until fully melted
  • Add hot water and start whisking until the water is fully incorporated
  • Take the bowl off the heat and place onto the ice
  • Keep whisking until a soft mass is achieved
  • Place into the form
  • Decorate and serve immediately

If the mass becomes too hard when you mix it over ice - return to bain marie briefly to loosen it up.
